Plate of the Union

Washington, D.C., February 2016—Plate of the Union, a grassroots campaign calling for bold action to reform the nation’s food system, recently launched a new youth-driven organizing effort called the Plate of the Union Campus Challenge. A video, featuring chef Sam Talbot and chef, food advocate, and Food Policy Action co-founder Tom Colicchio, was released, urging college students to join the effort. Everywhere, December 2015—The soybean has been planted and grown on this far and wide on this earth for centuries, but it’s only been recently (late 19th century) when soyfoods began being developed for human consumption.

At first, eating soy wasn’t a terribly engaging experience—but as technology improved, it became possible to eat soyfoods and soy-enhanced foods with pleasure. Today they not only taste like the real thing, the mouthfeel and texture is the same as eating red meat, fowl, or even fish.

Everywhere, USA, January 2016—There was a time when the word “diet” was only associated with weight loss. Those times are changing... In recent years, science and technology have taught us much about the ways that nutrition and specific foods can alter the entire function and overall health of our human systems. We now know that the foods we choose to put in our bodies can positively or negatively affect so much more than just our weight, metabolism or cholesterol levels. We are quickly learning that we must view diet as an individualized, life-long health plan, rather than just a means to lose weight.

Cambridge, Massachusetts, January 2016—The word sounds a bit strange, but it’s definitely a fruit, and one that’s been around for eons, like soy, the moringa tree and other ancient foods and spices. The problem, as it has been in the past for several of the ‘old’ foods is distance from market and finding ways to formulate it.

Now Jackfruit has come of age.

This fruit is different from your run-of-the-mill apple, peach or pear, because it’s much larger, loaded in fiber and somewhat akin to a meat disguising itself as a fruit.
